Animals recieve their growth and fattening from Native Plants and Grasses, Willows, Clovers, and ofcourse a few weeds for self medicinal purposes.

The Corriente breed was chosen for it's hardiness, forraging capibalities, slow growth,and internal marbelizing.
Agile, self protecting and herd oriented. Comming from Europe, the first cattle brought to North America by Columbus and the Colonist. Corriente have survived and evolved to produced a bison like flavor from simiar habitat.
We offer for sale by the half or quarter...
EXAMPLE: 300 lbs of boneless meat = 40 lbs of Cube/Minute Steak, 60 lbs of bone in or boneless Roast, 194 lbs Chopped Beef, and 6 lbs of Filet Minon or Tender Loin.

Cube/Minute Steaks:  produced by removing the back strap of the loin, sliced and passed through a cube machine multiple times to assure a tender and quick frying or grilling steak.
Individual portion aprox 4oz. (2 per pkg)
Roasts: from the sirloin tip, and shoulder clod. Passed through a mechanical needle tenderizing machine for optimum tenderness and flavor. Jute twine tied into 3-4 lb portions.
Chopped Beef:With the steaks and roasts removed the balance is Chopped, not ground by the process of using a state of art bowl chopper. The meat is chopped through a series of highly sharpened knives thus creating a homogeneous mix of fat and muscle with little or no stress on the cell structure, resulting in a robust mouth feel and fulfilling flavor. (1 or 2 lb packages)
Soup and Meaty Bones: from your animal availabe at your request. (5 lb pkg)
